Blend the red onions and garlic and then heat up the cooking oil. Once the oil is hot enough, saute the blended onions and garlic and red chillies on low heat. Occasionally, whisk it to avoid charring the sambal. When you see a ring of oil around the wok/pan, put in the palm sugar, tamarind paste, and anchovies. Let them cook on low heat. The rice is not fully cooked If you found that the rice is not fully cooked, all you have to do is put a hot water in cup and mixed it with some salt. Careful not to put too much or you’re going to end up with salty nasi lemak! No clumpy nasi lemak To have a soft and non-clumpy nasi lemak is to put a little bit of cooking oil or margarine into the rice. You can do this at the beginning of cooking process or when the rice is almost done cooking. Fragrant nasi lemak Usually, knotted pandan leaves are put together with the rice. But, if you want to do something different, you can blend the leaves, sieve, and put the essence into the nasi lemak while it’s cooking.
